She works alchemy on her fruits and vegetables, crisping her kale and enriching it with cheese; candying figs for a cheese plate; turning apricots into curried chutney. She even transforms Brussels sprouts into something so delicious they vanish from the plate; cutting them in tiny chunks, parboiling them, and roasting them in butter with sea salt and a little cayenne."It's like an artist, you can recognize their work across the room," one of our dinner guests says of Erickson's plates. "You can see she loves doing this."We enjoy the way Erickson cuts a whole ripe pear into loose rounds for a salad, letting it retain its original shape, and how what appears to be an uncut beet is actually presectioned into symmetric bites. A colorful appetizer "pickle plate" serves as a rotating, bright, unusual ode to those of us who can't get enough vinegar or crunch: On one visit, it includes pickled pencils of asparagus; prunes that taste of cloves; little rounds that look like chickpeas but turn out to be taut, plumped golden raisins; a single farmstand carrot, petite cornichons, and even a green pepper.
