Your question is slightly ambiguous. Your mom left the country so you could be born in 1975. And you didn't mention if she was married at the time. Was she a US citizen? If she had ten years of residency, five of which were after the age of 14, when you were born, there's a fair chance you are a US citizen. What you're looking for is the Immigration and Nationality Act of 1965, as amended. (I think the next big amendment was 1980, after you were born, so that's moot.) That's the good part. The more difficult part will be in satisfying a consular officer of the facts: 1) That your mother was a US citizen, 2) That she had the required residency, 3) That you are her son.
You're going to need a lot of original documents. Your foreign birth certificate will be a minimum, as will a copy of your mother's US birth certificate and marriage license. If her marriage ended in divorce, you'll need the divorce decree as well. You've got a lot of work ahead of you, but it seems *possible* you're a US citizen. Would have been better if you'd said what your mom's citizenship and residences were. Good luck!!
