I find it highly unlikely that the color is copyrighted, and fairly doubtful that it is trademarked. It's not like Tiffany invented it or created it or designed it. It's a color, which is a combination of light frequencies; or in the case of printed materials, a certain formula of ink. It existed long before Tiffany even thought to use it.
The name might be trademarked though. The design and logo using the color is copyrighted and probably trademarked.
If you have a source for the claim that it's copyrighted and trademarked, I'd be glad if you could post it just so I could research this more.

All designs copyrighted by Tiffany and Company, except where otherwise noted." I suspect that means that "Tiffany Blue" is trademarked. Plain old "light medium robin's egg blue" is not trademarked.
