I have been a nursing student myself, and we (the students) practiced the different techniques on eachother before we were allowed to take care of the patients. Sometimes it was pretty painful when the other students practiced on me, because they had no experience, but neither did I, and I thought that it was a good a idea to practice on eachother at first. When we started taking care of the patients the other nurses were pretty strict, and they always watched the things that we did so that they were able to step in if we were about to make serious mistakes. In the beginning we weren't allowed to practice on the patients without being watched, and if I am a patient I am not really afraid that the nursing students or med students will make serious mistakes, because I know that the professional nurses and doctors are watching them closely. If they are in doubt that the student can do things the right way they won't be allowed to do it alone.
