How many hours may an employee work before he/she will be required, under Colorado state law, to take lunch?

(Some of our employees have waited over 6 hours before taking a lunch break of 30-60 minutes. I don't want to run afoul of Colorado labor laws.)

In Colorado, the state law requires employees to have a minimum of 30 minutes for a meal break after 5 hours of work.

However, the Colorado meal break law does not apply to every employee. It applies to 7 very specific industries only: retail, food and beverage, public housekeeping, beauty service, the medical profession, laundry and dry cleaning, and employees in the janitorial service industry.
