I have a 3.4. I am a double major in criminal justice & psychology. I have a minor in middle eastern studies and Arabic. I studied abroad in Morocco. Held 2 internships: one in a law firm and one as a research assistant for a psych professor. Also I have been a RA (resident assistant for 2 years +) what are my odds of getting into a respected school (not ivy, but at least prestigious) ?

You will need a LSAT score of about 175 for a reasonable chance of admission at schools ranked seven to sixteen by US News. That score will give you almost certain admission to all schools ranked below sixteen.

Well, your LSAT score is 40-60% of the admissions decision (varies by school) so without that number, there's really no way to know. A 3.4 with a very good LSAT will get you in to many schools, but not the T14. A 3.4 with a mediocre LSAT will keep you out of any prestigious school.

I would recommend you do some research on the law school admissions process and the postgraduate legal job market. This is absolutely not something you want to go into blind.

As a side note, your soft factors are unremarkable and will hurt your application at the very top schools but will be perfectly adequate for admission to most other schools. I wouldn't expect much help there if you're trying to compensate for a low GPA or LSAT.

UF law is good, so is Stetson. I would try to pull your gpa up to at least a 3.5, and you should be good!
