Brian - Florida does not have a "day of rest" statute. This means that there are no prohibitions on the number of days employers can require employees to work. The only control on this is the requirement that employers pay overtime for hours worked over forty in a work week. The thinking when the original wage and hour laws were passed is that employers would find it less expensive to hire more workers than to have the same number of workers paid a premium for overtime.
Some states have laws such as the one you are asking about, but Florida is not one of them. Sorry.
