USCIS does not require notarized documents. Please read Instructions for I-751, item 2.5. It just has to have the complete information on the person signing it for you. If USCIS needs to, they will request the person to testify. But the affidavit is just part of a group of documents, so it is not likely that the person will need to testify. Add Birth Certificate of children, insurance that the couple has together, accounts (bank, credit), driver's license copies with the same address, etc. Nothing, not even copies need to be notarized unless the instructions for the petition say so (and they don't).
