Can an employer legally & purposely interfere with you accepting another position with a different employer?

If an employee was offered another job with another employer and his/her present employer knew about it, and they interfered making the employee not receive the job position. Then 2 weeks later the employer let the employee go stating that there was no longer a need for that employee. Isn't there a labor law issues involved?

Sometimes, there are workplae agreements which state as part of your enployment. You can not seek employment elsewhere, from 3 months after ceasing employment with the current employer.
That trade ideas, concepts and experise is not moved to the competition so to speak.

Generally the higher you are in management those policies are present.

But if your talking about minimum wage workers. Its very rare for restrictions to take place.

There isn't enough information here to form an accurate answer. Was the employee in contract with their employer? How did employer 1 interfere? Did they defame the employee's character? Was there any libel or slander committed? Did the employee tell employer 2 any proprietary or confidential information that damaged employer 1? Did either employers or the employee promise something and then fail to perform as promised and cause the other party damages?

Under the right circumstances, a former employer could be sued for "interference" with you new contract for employment, under ordinary tort laws, which vary from state to state. "Tortious interference" is fairly rare, and more often covered by "non-compete" agreements or where your going to work for a competitor would involve "inevitable disclosure" of trade secrets from your former employer.
