Question about job security for lawyers, pharmacists and eye doctors!?!?!?

I am a senior in highschool. I applied to colleges already, but am confused on what I want to be in my future. I originally wanted to be a pharmacist like my older sister is trying to achieve, but she is struggling and I did not have good enough grades to be accepted into the program my state school had. (Thats the school I'm trying to go to) I was thinking optometry, but I heard that is VERY difficult. I can be succesful ofcourse, but I have doubts if I will enjoy it or not. I was thinking maybe law, like major in political science or business to be on the safe side incase I change my mind. My question is, for example if I decide to do pre law but the school doesnt offer, so I will major in business and take the pre requisites, and then say I became a lawyer but did not have great job security, could I go into becoming a professor at a university teaching business or whatever my major was and do research and things like that? I know one of my dads friends is a civil engineer but he is a professor in that feild also at my state university, and does research and engineer projects on the side, and makes really good money.
