Does U.S.A Laws apply to me when I am on international waters far into the oceans?

Does U.S.A Law apply to me when I am on international waters far into the oceans? Do I have to obey the same exact laws that I would on U.S.A soil, on my personal ship in international waters? I know about the Law of the Sea, and Maritime Law, but I'm just wondering if land based laws apply to me on my personal ship when I'm far in the middle of the pacific?

Do you think there are too many chemists and research scientists in America?

Is rainwater harvesting on the seas possible on floating vessels?
